...of warm sunshine that is. We did have a nice day Saturday, it was a little cool but not the 20's we woke up to this morning. Anytime the weather is cold I think of soup. I especially love chowders, warm and creamy. I am including a recipe I love that is simple yet delicious, and I hope you try and enjoy it.
Seafood Chowder
1/4 lb. bacon; 1 medium onion, chopped; 1 stalk of celery, chopped
Brown the bacon in a skillet, remove the bacon to a towel covered plate to drain. Add the onion and celery to the skillet and saute' on medium low heat until onion is transparent. Put this mixture in stock pot and add the following:
2 cups water; 1 can condensed tomato soup; 1 cup frozen corn
2 cups diced potatoes; 1 bay leaf; salt and pepper to taste
Bring this to a low simmer for about 30 minutes, until potatoes are tender. Turn heat to low and add the following:
2 cups milk; 1 cup heavy cream; the bacon, crumbled; 1/2 cup each of cooked shrimp, lobster meat, crab meat, and baby clams
Heat this through, about another 5 minutes, serve with sourdough bread.
This is not meant to be a weight reducing food, it's meant to sooth and comfort on a cold day, and believe me it does.

The chowder sounds wonderful I'm going to try this one out. Never have been able to make a good chowder.
It's chilly here in Washington, but it's showing signs of spring so I'm hopeful.

It is really tasty, the trick is not to let the dairy scald. I usually get a nice round loaf of sourdough and cut the top off then scrap out most of the insides and use it as a serving bowl.
Still below average here in Massachusetts today, not unbearable.
Thanks and take care,
Robin
